Total and Intramuscular Bacterial Populations of Carcasses and Cuts

چکیده
In recent years there has been relatively little attention given to the question of the extent to which bacteria occur within muscle tissues. Although the available evidence has been far from conclusive, the ubiquitous presence of an intramuscular bacterial population which includes pathogenic species has often been assumed. The following passage by lngram & Dainty (1 971) gives an account of this traditional view:

Rapid chilling effect on the bacterial populations of pork carcasses
The effect of rapid chilling of pork carcasses on bacterial populations was examined. Two regimes of rapid chilling were applied: treatment 1 (at –31°C in the first 3 h of chilling, and then at 2–4°C till 8 h post-mortem) and treatment 2 (at –31°C in the first 3 h of chilling, and then at 2–4°C till 24 h post-mortem). Microbiological sampling of pork carcasses was obtained by swabbing. Swab sam...
متن کاملQuantification of muscle, subcutaneous fat and intermuscular fat in pig carcasses and cuts by magnetic resonance imaging.
The aim of this study was to determine the suitability of magnetic resonance imaging (MRI) to predict tissue composition of pig carcasses and cuts. Twenty-four pig carcasses were cut into the four primary cuts that were analyzed with a low field MRI imager before a total dissection. Images were then processed to identify and quantify pixels representing muscle, subcutaneous fat and intermuscula...
متن کاملCampylobacter in the Pork Food Chain : a quantitative hazard analysis
Campy/obacter are one of the most frequent causes of bacterial enteritis in industrialized countries and are widespread 1n food ammals. Pigs are known to be largely contaminated in farms, but few data exist about the status of the pork food chain. The purpose of this study was to quantify the Campylobacter contammat1on of the French pork food chain · prevalence, contamination level, bactenal sp...
متن کاملIsolation and identification of Campylobacter spp. and Campylobacter coli from poultry carcasses by conventional culture method and multiplex PCR in Mashhad, Iran
The genus Campylobacter is of great importance to public health because it includes several species that may cause diarrhoea. Poultry and poultry products are known as important sources of human campylobacteriosis. In this study, during the autumn months of 2005, a total of 100 samples from poultry carcasses, representing 20 broiler flocks were obtained by rinse test, after the chilling stage ...
متن کاملEffect of gender, terminal sire line and age at slaughter on performance, carcass characteristics and meat quality of heavy pigs
Two hundred and forty pigs of 56 ± 3 days of age were used to investigate the effects of sex (barrows; gilts), boar sire (DD, Danish Duroc; ND ✕ LW, Dutch Duroc ✕ Large White ; P ✕ LW, Pietrain ✕ Large White) and slaughter age (160; 175 days) on performance and carcass and meat quality. Treatments were arranged factorially (2 ✕ 3 ✕ 2) and there were four replicates (five pigs per replicate) per...
